How to Make Your Kitchari in 30 Minutes



  1. SOAK BEAN & RICE MIXTURE OVERNIGHT (OR 2+ HOURS) IN WATER ENOUGH TO COVER IT
  2. STRAIN AND RINSE WELL
  3. PUT 2 TABLESPOONS OF OIL IN HEAVY BOTTOM POT (SESAME, COCONUT, GHEE OR OTHER) ON MEDIUM-HIGH HEAT
  4. ADD MyHC KITCHARI SPICE MIX, STIR AND WAIT TILL FRAGRANT (3-6 MINUTES)
  5. ADD STRAINED & RINSED BEAN/RICE MIX, MIX FOR 30 SECONDS
  6. ADD 6 CUPS OF WATER &, RAISE TO HIGH HEAT (add optional slices of fresh gingeroot)
  7. WHEN BOILING, REDUCE HEAT TO MINIMUM & COVER WITH LID
  8. CHOP/SHRED 1-1.5 cups 'ORANGE VEG' (ie: yam, carrot, squash) & ANY OTHER OPTIONAL VEG (cauliflower, okra, zucchini etc)
  9. CHOP 1-2 cups 'GREEN VEG' (ie kale, spinach, broccoli)
  10. CHOP 1/2 -1 CUP or more HERBS (ie: cilantro, parsley, mint)
  11. WHEN KITCHARI LOOKS SOMEWHAT DRY ON SURFACE (apx.30min) ADD ORANGE VEG & OPTIONAL VEG & LEAVE FOR 5-10 MINUTES
  12. TURN OFF HEAT, ADD GREEN VEG AND HERBS, STIR AND LET STAND FOR 5 MINUTES
  13. FINISH WITH SEASONING/GARNISH OF CHOICE (ie: salt, cayenne, hot sauce, sesame seeds, shredded coconut, dash of lime)
